Bake healthy carrot-based sweets (2)

 

  • 100 grams of carrots
  • 200 grams of butter
  • 100 grams of powdered sugar
  • 2 egg yolks
  • 1 teaspoon of vanilla sugar
  • 1 teaspoon of baking powder
  • 300 grams of wholegrain spelt flour
  • jam for filling

Instructions:

Mix the egg yolks and sugar (including the vanilla sugar), add soft butter and mix it together with the sugar and egg yolks. Add the carrots (finely grated) and after working in the carrots, add the flour (gradually). Roll the dough with a rolling pin and knead it by hand. Leave the dough in the refrigerator for one hour. After removing the dough from the refrigerator, cut small wheels out of it. Bake at 180 degrees for approximately 15 minutes. Join the finished wheels together with the jam filling.

This recipe will yield approximately 30 completed and joined sweets, each weighing 20 grams on average. The calorie count of each sweet is 90 kcal. In comparison with ordinary Christmas sweets, these have twice as much fibre (from the spelt flour and carrots).
